Sometimes the neutral grey color is needed when sculpting, as it helps the eye do what it would do if sculpting a real figure with one color of skin using one color of clay. Other times it is nice to have the multiple colors as it can help the eye differentiate between muscles and forms, and some prefer multiple colors of clay when using version 3 for their sculpting training.
